Hey — I’ve actually seen something really similar before, and even ran into it myself once, so you’re not crazy. It’s not super common, but it does happen.
What’s usually going on is that Microsoft still has your account flagged as a child internally, even if your birthdate looks correct on the surface. Once that happens, some settings (like your date of birth) can get locked, and you won’t always be able to fix it directly yourself.
First thing I’d check is your profile here:

Make sure the birth date is actually correct there with no accidental hiccups or overlooks. If it lets you edit it, update and save — sometimes that alone clears it.
If it won’t let you edit it, that usually means the account is still under Family Safety control. In that case, it has to be updated through a family organizer account, or by temporarily adding your account into a family group so it can be managed properly.
If neither of those works, then it’s likely on Microsoft’s side and you’d need to contact support so they can verify your age and remove the child restrictions. This isn’t something you broke — it’s just how Microsoft locks accounts once they get classified as a minor.
