As long as earlier versions still exist, they can be viewed and restored through Version History in OneDrive, SharePoint, or directly within the Office application. If certain versions are no longer attached to the file, the standard restore function cannot recreate those missing intermediate versions.

You can open the SharePoint site associated with the class team, locate a student submission file, and compare the version history there with what is visible in Teams. Assignment files are stored in the class team SharePoint document library, so this comparison can help identify any discrepancies.
In addition, please review the version history settings and limits. Retention settings can be configured at the organization, site, or library level. As a result, changes such as automatic trimming or reduced version limits may affect how many historical versions are retained, and in some cases these changes may also apply to existing files.
Furthermore, based on Microsoft’s design, if the assignment workflow created a new copy of the file rather than continuing with the same file instance, the version history may not carry over. Consequently, if earlier versions are no longer present in the current file, they typically cannot be restored.
