Not a question, rather a solution for others stumbling upon this same issue in Classic Outlook. When composing a new message a rather annoying text is shown "Need a hand with this e-mail? Try coaching by Copilot".
Here's how to disable it in Classic Outlook:
Go to File > Options.
Select the Mail tab.
Scroll down, about 2/3rd until you see MailTips. Click the MailTips options button.
Scroll all the wall down and uncheck "Try coaching by Copilot".
Click OK, and again OK and the banner is gone.
